Guijuelo Ham
The small, sleepy town of Guijuelo in the south of the province of Salamanca, bordered by the high sierras of Bejar and Los Gredos with a special micro-climate ideal for drying and ageing has produced quality acorn fed Iberian ham since the Middle Ages. In recent years since the Designation of Origin, "Jamón de Guijuelo", aged only in the Guijuelo area has been recognised as one of the best in Spain. Try a slice of this thinly cut ham and its intense, persistent flavour and aroma will get you hooked.
